It’s springtime in Vermont, and that means foraging season is officially underway. The other day I walked down to the river to look for fiddleheads. And while it was too early for those little spirals of delight, the wild ramps were out in full force! My plan was to go back the next day with a trowel, but it was pouring rain. So I waited one more day and came home with dirty knees, a very bent trowel, and a bunch of ramps. This quiche is the first thing I’ve done with them, but there will be more. Much more. 

As I’ve said before, I love quiche. It really is soufflé pie. I had a guest on his way with a healthy appetite, so quiche and pie were in motion when he arrived. This one was filled with: wild ramps, kale, broccoli, fresh basil, feta, cheddar. The eggs came from my neighbor. Apparently I tend to fill my quiches with green things, but I don’t consider this habit a problem. If I’d baked this for just myself, it would have lasted me for days. Instead we finished off the last two pieces for breakfast the next morning.

So, I made pie. Apple pie. And in the oven at the same time was a quiche. The pie inspired me to make cinnamon gelato. Thank you, apple pie, for being a classic that never gets old.
