How did I spend my Friday night? Making cupcakes for my niece’s first birthday party tomorrow! This pie, along with the biscotti, is what I spent part of my day at the bakery working on. They reopen tomorrow after being closed for a month and I went in to help fill the empty bakery case.

In general, I can confidently say that my cookies are tiny and perfect. Today I made some that were tiny, yes, but need a little bit of tweaking before they can be called perfect. Despite containing orange and anise extracts, cinnamon, and vanilla bean, these butter cookies didn’t have a ton of flavor. I’m going to make a glaze to dip them in when I bake off the rest of the dough in my fridge. Since I made them to bring to a friend’s, I also baked some of my oatmeal-currant-date cookies as backup. I’d rather have options than excuses when it comes to food.
So, I made pie. Apple pie. And in the oven at the same time was a quiche. The pie inspired me to make cinnamon gelato. Thank you, apple pie, for being a classic that never gets old.
